Description: This grade 1 natural hails from the Sidama Bensa region of Ethiopia. Grade 1 is the highest quality offered in Ethiopia, and as such, only ripe cherries are selected and meticulously sorted to reduce defect. This cup is rich and complex, while also being delicate, airy, and well balanced. On the front end, you pick up on notes of strawberry and lavender. The mouthfeel is very creamy and coating, alongside it's light delicate body. It finishes incredibly smooth, with a strong note of sweet nuttiness. The notes of strawberry and cream gradually decays as it cools, and lingers pleasantly on the palate with a subtle touch of acidity.
Espresso Notes:
Recipe: 18 g of coffee into 34g of espresso output. Approx. 28-30 second extraction.

This espresso is incredibly well balanced with a smooth body and decadent crema. First thing you'll notice is the heavy berry and subtle cereal nose on it. The espresso has a wild strawberry flavor that flows into a juicy yellow peach as it coats the tongue and cools. The finish is rich, yet sweet, reminiscent of white chocolate. the lingering mouthfeel stays bright and sweet but doesn't overpower your palette at any point during or after drinking.
Recommended: Definitely a cortado. Clean and complex, this espresso shines with added body and sweetness.
