Description: This micro-lot was sourced from Finca La Bastilla, an idyllic farm set atop the high peaks of Nicaragua’s Jinotega Mountain region. Ripe red coffee cherries were picked from La Bastilla’s micro-farm. Coffee cherries are dried whole, without removing any of the fruit. After the cherries have been dried, the seeds (or coffee beans) are removed from the fruit and prepared for export. The team at La Bastilla strives for strong berry notes and uses a proprietary process that is a "trade secret" of the La Bastilla mill. The result is a super fruit explosion! Beginning with unmistakable notes of blueberry both in aroma and taste. The coffee follows with even more berry sweetness and juiciness. The mouthfeel stays clean and tea-like throughout. And as the coffee finishes, it settles into a deeper black tea richness and linger.

Shelf Life: An unopened bag will remain tasty for five months due to our processes and packaging. We remove most of the oxygen from each bag during our packaging process and replace it with food-grade nitrogen to lovingly cradle these precious beans for a long time. We use the highest quality bags with one-way valves to retain the low-oxygen environment we create and allow our coffee to off-gas naturally.
