Producer Info: This micro-lot was sourced from Finca La Bastilla, an idyllic farm set atop the high peaks of Nicaragua’s Jinotega Mountain region. Ripe red coffee cherries were picked from La Bastilla’s micro-farm. This unroasted micro-lot coffee underwent a bespoke anaerobic process that utilized specialty yeasts (Saccharomyces cerevisiae) made by Lallemand for fermentation. Ripe red coffees were picked and later placed in steel tanks along with the special yeasts. Subsequently, the oxygen was removed from the tanks and the yeast helped to excite the chemical reactions in the process. During the anaerobic processing, mill managers constantly monitor heat and pH levels. Careful attention ensures strong results.
Description: Beginning with unmistakable notes of tropical fruits both in aroma and taste, the combination of pineapple sweetness and gentle malic acidity of a green grape or apple reminds us of a ripe starfruit. The coffee follows this bloom with even more berry sweetness and juiciness the enriches the cup. The mouthfeel stays jammy and rich throughout, coating the mouth pleasantly and evenly. Leading into how the coffee finishes, it settles into a deeper floral richness and linger somewhere heavier than vanilla but not as intense as hibiscus. This fruit bomb is another fantastic offering from one of our favorite farms!
Recommended: Pour-Over, this coffee really shines as a high-extraction brew at medium-high temp (190 F). With its really pronounced sweetness and complex fruitiness that only deepens as the cup cools. A 1:10 iced pour over was mind-altering and unbelievably easy to drink- Alberto
