Description: This coffee hails from the Chiapas region of Mexico, and is named for the many waterfalls on the finca. This farm is one of the few farms producing naturals in Mexico. The lot is handpicked and sun dried on raised beds in a green house that maintains a temperature of 30-35℃. The coffee goes through destoning after drying to ensure that no foreign matter makes it through. After hulling to remove the dried skin and parchment, the green coffee is color sorted and graded by size to keep the lot uniform visually and in quality. We roasted this coffee medium dark, and it's complexity still really shines through. Up front, you will pick up on notes of smoked vanilla and a mellow cherry acidity. It has a rich body with a velvety mouthfeel, that is accompanied by a note of walnut cake and brown sugar. It finishes incredibly smooth, alongside a note of cedar woodiness and a subtle lingering acidity. This coffee is part of our rotating series of coffee, so get it while you can!
