Description: This coffee hails from the Chiapas region of Mexico. Mariana Luttmann devotes 70 hectares of Finca Aurora to forested coffee production, where coffee is shade-grown beneath native shade trees, and 50 hectares to producing honey. Mariana handpicks ripe cherries, and processes her own coffee, pulping and then fermenting in wooden tanks. After pulping, the coffee is washed with clean water and then dried on patios. This really shines through in the coffee. On the front end, you pick up on notes of smoked juniper, smoked walnut, and a nice marzipan sweetness. This quickly melts into notes of orange crème and fig, which pairs very nicely with the front end. The body is medium heavy and the mouthfeel is very creamy, accompanied by very subtle notes of earth. This cup finishes very smooth with strong notes of bakers chocolate and a touch of black pepper, with the subtle earthiness lingering pleasantly on the palate.
