Description: This micro-lot is 100% Gesha. The variety was first discovered by Abyssinia, Ethiopia in 1931. This lot was exposed to aerobic fermentation for 24 hours. Later, the coffee was placed inside grainpro bags for 50 hours maintaining a temperature below 22 degrees Celsius and adding CO2. The coffee was then placed on raised beds at a temperature below 35 degrees Celsius until ideal moisture content was achieved. This cup is incredibly complex and super well balanced. On the nose, you pick up on peach, honey, melon, and wildflower. Up front, the taste hits you with notes of white peach, cantaloupe, and pineapple sweetness. Soon after, things round out more floral and sweet, with notes of chamomile, strawberry, and kiwi. The body is light, and the mouthfeel is coating and creamy. Its mellow acidity brightens up a bit as it cools, and it finishes with a clean lingering note of cacao blossom.
