Ingredients: 100% Arabica Coffee

Description: This natural processed coffee hails from the Ayarza Cherry Mill, located on the Finca El Retiro farm at the border of Guatemala's Santa Rosa, Jalapa, and Jutiapa departments. This coffee is of the Yellow and Red Catuai, Pache Colis, as well as Red and Yellow Bourbon varietals. The coffee was dried for 5-6 days on the patio, and then finished for about 12 hours in a mechanical dryer. This has also become one of our favorite Guatemalan coffees! This cup opens up with well balanced acidity, and intense red berry and cherry notes, as well as a blackberry brightness. The mouthfeel is incredibly syrupy, with notes of plum and fruit leather. Its body is medium, and is accompanied by floral notes of honeysuckle and rose hips. This cup finishes smooth with a nice lingering sweetness.

Espresso Notes:

Recipe: 21g of coffee into 32g of espresso output. Approx. 24-28 second extraction.
(Mahlkonig K30 grinder and Faema E-Nova A1 Espresso machine)

The aromatics from the cup are intoxicating. The espresso starts sweet and fruity, a crisp raspberry note cuts through the rich crema and dense body. A wild complexity that makes me liken the espresso to flowers dipped in chocolate and drizzled in maple syrup. the coffee never feels or tastes heavy at any point. The lingering mouthfeel stays bright and sweet, coating every bit of your mouth pleasantly.

Recommended: straight espresso. An oatmilk cortado if you're feeling adventurous.

Shelf Life: An unopened bag will remain tasty for five months due to our processes and packaging. We remove most of the oxygen from each bag during our packaging process and replace it with food-grade nitrogen to lovingly cradle these precious beans for a long time. We use the highest quality bags with one-way valves to retain the low-oxygen environment we create and allow our coffee to off-gas naturally.
