Description: We love it when experiments work out! We aged our Colombia Cattleya in bourbon for 10 days, and then roasted it to a similar profile as our regular Cattleya. The results are absolutely incredible! This complex coffee ended up tasting like an Old Fashioned with a bit of candied orange peel. On the nose, you pick up on overwhelming notes of bourbon, oak, and praline. These aromatic notes are soon followed by notes of sweet and floral bourbon, with just a hint of spice. Soon after, you get notes of maraschino cherry, candied orange peel, and a touch of lavender. The body is medium, and the mouthfeel is creamy, accompanied by notes of red berry acidity and marshmallow. This cup finishes smooth, and has a sweet and slightly earthy lingering note of oak. This coffee is absolutely sublime, and we highly recommend giving it a try!

Espresso Notes:

Recipe: 20g of coffee into 30g of espresso output. Approx. 25-28 second extraction.
(Mahlkonig K30 grinder and Faema E-Nova A1 Espresso machine)

One of our more interesting offerings, this coffee varies wildly from method to method. I found that my ideal espresso with this coffee required a super fine grind as the spirit infusion removed a lot of excess moisture after the oxidation process. The coffee has a very light nose of bourbon and floral aromatics. The flavor notes stay light and become mostly floral and sweet citrus, (jasmine and candied mandarin). The coffee has a subtle spiciness that is complimentary to the really pronounced, juicy, demerara sugar sweetness. With a medium body and floral linger its hard not to compare the espresso to bourbon itself!
Recommended: Lightly sweetened espresso soda or an espresso old fashioned.

Shelf Life: An unopened bag will remain tasty for five months due to our processes and packaging. We remove most of the oxygen from each bag during our packaging process and replace it with food-grade nitrogen to lovingly cradle these precious beans for a long time. We use the highest quality bags with one-way valves to retain the low-oxygen environment we create and allow our coffee to off-gas naturally.
