Producer Info: Chiapas Altura Superior SHG EP is a regional lot sourced from the highlands of Altos, Chiapas, one of Mexico’s most celebrated coffee-growing regions. This lot brings together coffees from various smallholder producers. Working on small family farms throughout the region, these producers cultivate coffee in the rich volcanic soils and cool mountain climate that have made Chiapas a cornerstone of Mexican specialty coffee production. This coffee is classified as SHG and EP designations, these grades represent some of the highest-quality coffees produced in Mexico.
Description: A light medium cup that not only has a robust body, but is also fairly complex, especially as it cools. On the front end, you pick up on notes of sweet nuttiness and a tinge of caramel sweetness. The body is medium heavy, accompanied by a pronounced note of wildflower alongside a creamy mouthfeel. It finishes smooth, with notes of apple and lingering notes of gentle florals and citrus becoming more prevalent on the tail. Get it while you can!
