Description: You’ve heard of anaerobic processing before, but how about HOT anaerobic? Is that anything like hot yoga? Thankfully, no! Anaerobic just means “without the presence of oxygen” which only controls for that one variable during fermentation. At Finca Los Conejos in Santa Rosa de Lima, they take it a step farther by controlling temperature as well. Using high end fermentation tanks that would look right at home in an upscale microbrewery, they are able to carefully monitor and adjust the temperature throughout the process. Once the coffee meets their exacting parameters, they finish with a full wash and careful shade drying to preserve the cleanliness of the cup.

The result is one of the cleanest and most balanced cups we’ve ever had from Guatemala. a nice buttery mouthfeel with a gentle nose of spices like cardamom and anise. Followed by a ripe aroma and semi tart sweetness, like a perfectly in season stonefruit. the sweetness lingers and evens out with the subtle citrus acidity and buttery mouthfeel. 

Espresso Notes:
Recipe: 21g of coffee into 42g of espresso output. Approx. 30-34 second extraction.

Central American coffees have been the most recognizable flavor profile for coffee since the mid 20th century. This espresso is a perfect example of why! It starts with nice subtle florals and a robust nuttiness on the nose. the espresso fills your mouth with a creamy and complex flavor of dulce de leche and warm spices like cinnamon and cardamom. The espresso melts onto your tongue gently with brighter notes of citrus. But the coffee finishes and lingers of soft florals like vanilla.

Recommended: This coffee is perfect for all your coffee cocktail needs! But I love it in a simple espresso soda. Just take a shot, add 2oz grams of simple syrup, 14oz of carbonated water, and finish with a squeeze of your favorite citrus fruit!
