Producer Info: Café Pacas has been working with Finca La Guachoca since 2008, producing some of the finest coffees in their portfolio. The farm derives its name from the quail-like birds that inhabit area. Since 2013, work has been underway renovating this farm, focusing on specialty coffee varietals such as Red Bourbon, Orange Pacamara, and Bernardina. The combination of shade trees and coffee plants creates a diverse ecosystem that supports wide range of plants and animals. Café Pacas is committed to ongoing efforts in soil and water conservation, biodiversity preservation, and sustainability practices on the farm. In addition to coffee, Finca La Guachoca also cultivates jocote, a local fruit that is harvested during the month of September. The cultivation of jocote serves as an additional source income for farm.

Description: This offering is a rich and wild cup of coffee! Starting off with lovely sweet aromatics, and various robust fruity notes on the nose and first sip. the body is creamy and crisp with defined cherry brightness and malic acidity. The cup then deepens into a more defined berry sweetness and juiciness. As the coffee cools you find a much more pleasant silky medium body and the acidity fades off. The cup finishes gentle and crisp, in a refreshing suppleness. 

Espresso Notes:
Recipe: 20g of coffee into 40g of espresso. Approx. 25-27 second extraction.
(Mahlkonig K30 grinder and Faema E-Nova A1 Espresso machine)

This espresso starts with nice subtle florals and a robust nuttiness on the nose. the espresso fills your mouth with a creamy and complex flavor of dulce de leche and bright fruits like raspberry and cherry. The espresso melts onto your tongue gently with notes of citrus. But the coffee finishes and lingers of soft florals like vanilla.

Recommended: This coffee is perfect for all your coffee cocktail needs! But I love it in a simple espresso soda. Just take a shot, add 2oz grams of simple syrup, 14oz of carbonated water, and finish with a squeeze of your favorite citrus fruit!
