Description: This anaerobic process starts with handpicked, mature coffee cherries that have a Brix degree (a measurement of sugar content) near 26. The coffee is depulped and placed in stainless steel tanks with all its mucilage. As the fermentation begins, oxygen decreases and the carbon dioxide increases creating pressure in the fermentation tank. The coffee develops in a unique mix of lactic acid and malic acid, which contributes to the coffee's complex flavor. Once ready, the coffee is 100% sun dried. This anaerobic natural Costa Rican coffee is wonderfully complex and well balanced. This cup starts off with a nice note of macerated raspberry and a mellow but very sweet acidity. You soon pick up on a floral note of hibiscus cream that is accompanied by a silky, coating mouthfeel. The body is light medium but still has depth to it. It finishes very smooth, with a nice note of cabernet sauvignon, that is ever so slightly spicy, but still remains sweet and creamy. The floral and berry notes carry on through the finish and linger subtly on the palate.
Shelf Life: An unopened bag will remain tasty for five months due to our processes and packaging. We remove most of the oxygen from each bag during our packaging process and replace it with food-grade nitrogen to lovingly cradle these precious beans for a long time. We use the highest quality bags with one-way valves to retain the low-oxygen environment we create and allow our coffee to off-gas naturally.
