Description: Ki-Saya is an organic offering from Chiapas. The name come from the combination of two words in the indigenous Mayan language of the area: Ki, meaning “tasty” and Saayab, which means “nature.” Coffee is the most important commercial crop in Chiapas and has a long history in the region, representing a significant source of income for small producers, some 44% of whom are indigenous, mostly Tzotzil and Tzeltal. This is a full bodied medium roast that is very well balanced and has nice, yet subtle, complexity. On the front end, you get notes of caramel, brown butter, and the slightest hint of berry. The body is full with a creamy, smooth mouthfeel. This is accompanied by notes of roasted nuts and graham cracker. The finish is incredibly smooth and clean, with notes of chocolate and a fruity sweetness that lingers on the palate. A wonderful decaf that we are really enjoying here in the shop!
