Description: This coffee was exposed to a dry aerobic fermentation of 24 hours, later placed inside grainpro bags for 90 hours while maintaining a temperature below 22 degrees Celsius. In this environment, bacteria feed on carbohydrates and sugars from the mucilage, leading to a higher concentration of lactic acid. Then placed on raised beds until 11% moisture content is achieved. This micro-lot is 100% Caturra, a variety that originated in Minas, Brazil and is a natural mutation of Red Bourbon. Caturra produces more coffee and is more resistant to plant diseases than Bourbon. This coffee is very well balanced with a nice, subtle complexity. Up front, you pick up on soft notes of blueberry and milk chocolate instantly with a hint of wildflower. You will notice a very mellow acidity. These notes become more prevalent as the cup cools. The body is light and is accompanied by a floral note of rose. The mouthfeel is pillowy, and it finishes with a subtle note of lemon drop sweetness and a lingering floral note.
