Description: We did it again! This time, we aged our green single origin Brazil Ipe in bourbon for 6 days. Not only that, but we also infused the bourbon itself with cardamom pods, vanilla bean, and cinnamon sticks for a week prior to infusing the green coffee. Then, we roasted it to a similar profile as our regular Brazil Ipe. The results are just what we were going for! A holiday spiced coffee without any flavoring added to it! This cup came out wonderfully complex, and with all the subtle holiday flavors that we love so much! We think you'll love it too!
On the nose, you pick up on notes of spiced wood, butter, and toffee. These aromatic notes are soon followed by tasting notes of cinnamon cookie and vanilla bean. Soon after, you pick up on subtle notes of sweet bourbon, toffee, brown butter, and marzipan. The body is medium, and the mouthfeel is creamy and coating, accompanied by notes of honeyed graham cracker and a subtle note of cherry cobbler. This cup finishes very smooth, and has a sweet and slightly earthy lingering note of smoked oak and golden raisin. The flavor of this coffee is absolutely perfect for this cold holiday season, and we highly recommend giving it a try!
